Zucchini Pizza Boats

I am always looking for new ways to eat vegetables, and this certainly is a recipe I’ll be making again. You’ll notice I tagged this blog under appetizer and entree. I think theres zucchini boats would be great for your next part and for those who are following a healthy-eating regimen would certainly like this recipe as a lunch or dinner.

The recipe was pulled from one of my Pinterest boards. The pin took me to another food blog – Savoring the Thyme

Ingredients you’ll need:

1 zucchini
Marinara sauce
1 meatball, turkey meatball, sausage link or turkey sausage link (I used 3-4 mini meatballs I made yesterday)
Shredded Mozzarella
Sea Salt

(1) Wash the zucchini, and then cut zucchini in half

(2) Take a spoon and hollow out the zucchini, DO NOT THROW AWAY! Make sure you scoop the zucchini into a bowl. This will be the start to the filling for the boats.Try to remove as much as possible.

(3) Add crumbled meat, sauce, cheese to the scooped zucchini and then scoop it in to your zucchini boats. Place the zucchini boats on a piece of tinfoil on a baking sheet. The tin foil always for easy clean-up when you’re done.

(4) Add a little bit of shredded cheese to top of each boat. Place in the oven at 350 degrees for about 20 min.

Ah Nom Nom!!! You’re Done!

One zucchini made enough for about 2 people (2 pieces per person) for a meal or 1 piece per person for an appetizer. If you are interested in making a tray of zucchini boats I would recommend buying about 3-4 zucchinis.
