Maple Mashed Sweet Potatoes

Unfortunately, Mom is not feeling well today. I know making the weekly pot of sauce and a ba-zillion meatballs was on her “to-do” list, so I decided to surprise her and check-it off the list.

NOPE — lol some recipes are not for sharing. Got to keep some of the Rolandelli cooking secret? Or else our cooking would’t be so special, now would it??

What I will share with you is the side dish I made to be used this week…..Maple Mashed Sweet Potatoes

Ingredients you’ll need:

– Sweet Potatoes
– Sugar Free, or Lite Maple Syrup
– Butter (I used Land ‘o Lakes fresh buttery spread)

(1) Rinse and peel the sweet potatoes. Tip: keep the bag you bought the potatoes in and drop the peels in there as you work, when you’re done you grab the bag and throw it right in the garbage….easy clean up!!!!

(2) Cut the sweet potatoes into large chunks and put in a medium-large size pot

(3) Add water to the pot and then boil until the sweet potatoes are soft enough to mash

(4) When the potatoes are soft enough to mash, drain the water and return the potatoes to the pot. Then add the maple syrup (I make a generous swirl around the pot)  and about 3 tablespoons of  butter and then stir.

(5) Then put the mashed potatoes into a tupperware or serving dish.

AH NOM NOM!!! You’re Done!!!

This batch I made for use during the week so it went straight into a tupperware.  We usually get about 2 uses out of a serving like this.  When we choose to have it we put about 1/2 of it into a bowl and pop it in the microwave to heat up. Other than maybe a little sea salt (or salt) you don’t need to add anything before you eat it.
